Stress-busting Soup

We live in a world that’s super-fast-paced and full of demands. This soup is designed to calm you down. One of the key ingredients is turmeric which not only has powerful anti-inflammatory properties it has also been shown to reduce anxiety and increase serotonin levels. 

INGREDIENTS

1 tablespoon olive oil

1 medium onion

¼ cup (38g) chopped ginger

4 garlic cloves, peeled and chopped

1 large, sweet potato, peeled and diced (about 1.5 lbs)

2 large carrots, chopped

1 tablespoon turmeric

Pinch of sea salt

4 cups (1 litre) vegetable or chicken stock

1 can (400ml) coconut milk

2 tbsp Correxiko Collagen powder

Juice from one lime

METHOD

  1. Add the oil to a large pot over medium-high heat. When it melts, add the onion and let them cook for 3-4 minutes. Add the garlic and ginger and cook for 1 more minute. Add the sweet potato, carrots, turmeric, sea salt, black pepper and stir the pot for about 30 seconds.
  2. Add the stock to the pot and bring the pot to a boil. Reduce the heat to medium and simmer for 10 minutes, or until the vegetables are soft.
  3. Transfer the soup to your blender, add in the two tbsp of collagen powder and blend until smooth. Pour the soup back into the pot, add the coconut milk and lime juice, and heat through. Serve with roasted almonds and chopped parsley.
