Correxiko Lemon Zest Collagen Cookies 

Ingredients to make 14-16 cookies

  • 170g ground almonds
  • 40g Spelt flour* - or you can swap for gluten-free flour or wholegrain flour 
  • 2 tbsp Correxiko marine collagen powder
  • 1 tsp bicarb of soda
  • pinch salt
  • 50g melted coconut oil
  • 70ml maple syrup
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract

Method:

  • Preheat oven to 170 degrees C
  • Line a baking tray with baking paper.
  • Mix all dry ingredients in one large bowl
  • Mix all wet ingredients in a smaller bowl
  • Then add wet ingredients to the dry, until combined
  •  Pop in the fridge for 30 minutes
  • Roll into balls and flatten slightly. They will spread out during the baking time, so make sure you leave about 2-4 cm of space out on the baking tray. 
  • Bake in the oven for 15 minutes, leave for 5-10 mins to cool and enjoy!
